Prime Rib Cooking Time Calculator

Plan a standing rib roast: roasting time, when to pull it from the oven, and how many guests it will feed.

How to use the Prime Rib Cooking Time Calculator

  1. Enter the roast weight (bone-in) and pick its unit.
  2. Choose the doneness.
  3. Enter the planned serving time.
  4. Press Calculate. The result updates automatically as you type.

About the Prime Rib Cooking Time Calculator

A standing rib roast is an expensive cut, so timing matters. Bring the roast out of the refrigerator about an hour before cooking, season it well, and roast bone side down at 325°F (163°C). Start checking the internal temperature about 15% before the estimated time, and pull the roast when it is 5–10°F below your target, because it keeps cooking as it rests for 20–30 minutes.

Plan on roughly ¾ to 1 pound of bone-in roast per person, or one rib for every two guests. The USDA recommends cooking whole cuts of beef to at least 145°F (63°C) followed by a 3-minute rest; rarer doneness is a personal choice.

Formula

Heat travels into a roast from the outside, so time grows more slowly than weight. This calculator uses:

time (hours) ≈ 0.55 × weight(lb)2/3 × doneness factor

Doneness factors: rare 0.88, medium-rare 1.0, medium 1.12, medium-well 1.25, well done 1.4. For an 8 lb roast at medium-rare this gives about 2 h 10 min (around 16 min per pound). Carryover cooking raises the temperature another 5–10°F while the roast rests.

Example calculation

Using the default values:

  • Roast weight (bone-in) = 8 lb
  • Doneness = Medium-rare
  • Planned serving time = 18:00

the calculator returns:

  • Estimated roasting time at 325°F: 2 h 10 min (≈ 16 min/lb)
  • Check temperature from: 1 h 50 min into roasting
  • Pull from oven at: 120–125°F (49–52°C)
  • Final temperature after resting: 130–135°F (54–57°C)
  • Put it in the oven by: 3:20 PM (includes 30 min rest)
  • Serves about: 8–10 people (about 4 ribs)

Frequently asked questions

How long do I cook an 8 lb prime rib for medium-rare?

About 2 hours 10 minutes at 325°F, pulling it at 120–125°F and resting it 20–30 minutes to reach 130–135°F.

How many people does a 3-rib roast feed?

A 3-bone roast weighs about 6–7 lb and serves 6–8 people.

Should I sear prime rib first?

Either a hot sear at 450–500°F for 15 minutes or a reverse sear at the end gives a browned crust. A reverse sear (low oven first) cooks more evenly but takes longer than this estimate.
